  • Pre-heat the oven to 200°C
  • Lay the pastry squares on a baking tray with space between each one
  • Use a blunt knife to mark a border about 1cm all around each square without cutting all the way through
  • Top each square with the peach slices and sprinkle on the blueberries, keep all the fruit inside the border, chill in the fridge until the pastry is firm, about 20 minutes
  • Bake in the oven for about 15 minutes or until the pastry is risen and golden
  • While they are cooking, heat the sugar, water and vanilla in a small saucepan on a medium hob until the sugar melts and the mixture becomes syrupy
  • Brush the fruit with the vanilla syrup and allow to cool before serving
