ARABIC PICNIC TABLE RECIPE | Geant Online Blog | Ramadan Recipe          This table picnic consists of Hummus, Tabbouleh, Lamb Kofta, Shish Tawook, Arabian sausage with baked tomatoes and is served with Arabic flat bread. This was made for 2, so increase quantities as needed.

♨ Arabic Picnic Table Recipe

Ingredients:

For the Hummus –

  • 1 carton/tin of chickpeas (approx 200g)
  • 2 tablespoons of tahini
  • 1 clove of garlic
  • 1 tablespoon of lemon juice
  • 3 tablespoons of good quality olive oil
  • a pinch of paprika

For the Tabbouleh –

  • 12g of bulgur wheat
  • 2 cherry tomatoes
  • 1/2 a small red onion
  • 1 bunch of fresh parsley
  • 1/2 a small bunch of mint
  • 1 tablespoon of fresh lemon juice
  • 2 tablespoons of olive oil

For the Shish Tawook –

  • 2 boneless skinless chicken breasts
  • 1 clove of garlic
  • 3 tablespoons of olive oil
  • 1 tablespoon of tomato paste
  • 2 tablespoons of full fat yogurt
  • 1 teaspoon of paprika
  • 1 teaspoon of sumac

For the Lamb Kofta –

  • 200g of minced lamb
  • 1 teaspoon of cumin powder
  • 1 teaspoon of coriander (fresh or dried)
  • 1 clove of garlic
  • 1/2 a small red chili
  • 1/2 a teaspoon of sumac

For the Sausage and Baked Tomatoes –

  • 250g of Arabic sausage (if not available you can you any spiced soft sausage)
  • 3 plum tomatoes
  • 1 tablespoon of olive oil
  • 1 clove of garlic
  • 1/2 a small red chili
  • 1 teaspoon of lemon juice
  • 1 teaspoon of paprika
  • 1 teaspoon of coriander (fresh or dried)

Method:

Let’s start with the hummus and Tabbouleh as that can be kept in the fridge for a couple of days although I love it when it is fresh.

Hummus –

  • Drain the chickpeas reserving the liquid. Keep 4 or 5 chickpeas to the side for decoration.
  • Place all the ingredients into a blender (or a bowl and use a hand blender) and pulse until you get a thick paste, if you want to thin it a little add some of the liquid you reserved from draining the chickpeas a little at a time.
  • Transfer to a serving dish, make a small well in the middle and drizzle a little olive in the well and place the whole chickpeas you saved into the olive oil.
  • Last but not least sprinkle a little little paprika onto a couple of areas.

Tabbouleh –

  • Place the bulgur wheat into a bowl with 25ml of bowling water, stir and cover with a tea-towel until all of the water has been absorbed. Leave to cool.
  • Chop the herbs, tomatoes and onion as finely as you can and place in a dish, when the bulgur wheat has cooled fluffy take it with the fork to separate it and add it to the mix.
  • Drizzle with the olive oil and lemon juice and season to taste.

Shish Tawook –

  • Dice the chicken and keep to one side. Finely chop the garlic and mix it well with all the remaining ingredients, add the chicken.
  • Stir to ensure the chicken is well coated and leave to marinade for at least four hours.
    You can either thread the chicken onto metal or bamboo skewers prior to cooking or you can simply cook as cubes.
  • Heat either the BBQ or a griddle pan (brush with olive oil to prevent the chicken from sticking) to a medium high heat and cook for 8-10 minutes, turn the chicken regulatory to ensure even cooking.

Lamb Kofta –

  • Finely chop the garlic and chili. Add these to a bowl along with all the other ingredients and use your hands to thoroughly combine them altogether.
  • Divide the mixture in to four equal sized portions and roll into the shape of thick sausages. As with the Shish Tawook it is up to you if you want to place them on sticks or cook as they are.
  • Using a BBQ or griddle pan that has been brushed with oil cook for 8-10 minutes turning regularly.

Sausage and Baked Tomatoes –

  • Pre-heat the oven to 180 degrees. Chop the sausages (skin on) into bite sized pieces, about 1.5cm and fry for 5 minutes  (no oil needed, as the sausages will create this) remove from the pan but keep the oil in there.
  • Finely chop the garlic and chili and roughly chop the tomatoes. Fry the paprika and if you are using coriander powder fry that off as well in the sausage oil, add the tomatoes, chili and garlic and soften.
  • Add the sausage and transfer to an oven proof dish and bake for 20 minutes

Place everything on the table with some bread and some side plates and just dig in. Enjoy your family get together!  😋

  • Brush the fruit with the vanilla syrup and allow to cool before serving

Method:

  • Cook the cumin seeds in a large, frying pan for about 1 min, be careful not to burn them. Remove from the heat and place the seeds in a mixing bowl.
  • Add everything else to the bowl and mix well. Using wet hands, take walnut-size handfuls of the mixture, then press into flat little cakes, or patties. They can now be chilled until ready to cook, or cooked straight away.
  • Reheat the pan on a medium hob and add enough oil to cover the base of the pan.
  • When hot, add the fritters, cook until golden.
  • Serve with lime wedges or your favorite dip (they go really well with sweet chilli sauce, or a yogurt and mint dip.)

Rabbit Stew

Rabbit Stew Recipe | Geant Online         If you have never tried rabbit I highly recommend it, as well as having a great flavour it is also incredibly lean, making it a healthy choice. You can cook rabbit in all different ways, but this stew is incredibly easy and the tomato based sauce keeps it light enough to enjoy all year round.

♨ Rabbit Stew Recipe

Ingredients:

  • 1 whole rabbit
  • 1 tin chopped tomatoes
  • 1/2 large onion, diced
  • 1 teaspoon dried sage
  • 1/2 teaspoon paprika
  • Approx 4 medium mushrooms
  • 1/2 cup of white wine (optional)
  • 1/2 cup of bean and lentil mix (you can find bags of these pre-mixed  but if you prefer you can purchase them separately and make your own mix, they last along time when stored in an air tight container.)
  • 1/2 cup plain flour
  • 4-5 medium sized new potatoes

Method:

  • First things first soak your bean and lentil mix in cold water for at least 3 hours (overnight is fine if that’s easier for you)
  • Remove the liver and kidneys from the cavity, they are attached by a small piece of fat so are simple to cut out, I like to add the liver to the stew as I feel it enhances the flavour but this is personal choice. Next you will need to cut the rabbit into sections, the best way to do this is to use a very sharp knife and cut directly at the joints so you end up with 5 pieces. Dust the rabbit with plain flour.
  • Pre-heat the oven to 120 degrees.
  • For the stew, take a metal casserole dish with a lid, I love my cast iron Le Cruset dish but a basic pan and lid will also work just fine as long as it is oven proof (i.e.no plastic handles). Place the dish on medium heat hob and add a drizzle of olive oil place the floured rabbit in the pan and cook for 2 minutes on each side, remove from the pan.
  • Using the same pan add a little more oil and fry the onion and crushed garlic until soft but not brown, add the  mushrooms, paprika and sage. At this stage there will be a lot of flavour accumulating on the bottom of the pan, pour in the wine (if using) and scrap the bottom of the pan with a spoon to release these. Season with a little salt and pepper to your taste. Add the rabbit, tinned tomatoes and the lentil and bean mixture, stir thoroughly and remove from the heat.
  • Peel your new potatoes and slice finely. Lay the sliced potato all over the top of the stew.
  • Cover with the lid and place in the oven to bake for 2 hours.

I like to serve mine with homemade wholemeal garlic bread, which I use to soak up all the leftover juices, but it is just as good on it’s own.

Surf and Turf with Chimichurri Sauce | Geant Online

            I know the title makes it sound like something you would only order in a restaurant, but I promise you this fantastic dish is super easy to make at home and it can be on the plate in less than 45 minutes. I use fillet steak when making this recipe, although you can use another cut if you prefer. You can also substitute the lobster tail for prawns if you want to keep the cost lower, it will still taste amazing!

If you have any left over chimichurri sauce it keeps well in the fridge for about a week.

♨ Surf & Turf with Chimichurri Sauce Recipe

Ingredients:

For the Surf n Turf

  • 2 thick cut fillet steaks (about 3 inches thick)
  • 1 lobster tail
  • 1 clove of garlic
  • 1 teaspoon of butter
  • a sprinkle of parsley

For the Chimichurri Sauce

  • 1/4 cup of olive oil
  • 4 tablespoons cup wine vinegar (apple cider vinegar also works well)
  • 1 clove of garlic, finely chopped
  • 1/2 a shallot, finely chopped
  • 1/2 teaspoon of chili flakes
  • 1/4 chopped fresh cilantro
  • 3 tablespoons fresh chopped parsley
  • large pinch of salt

Method:

  • Start by making the chimichurri. Place all the ingredients for the sauce in a bowl and use your hand blender to pulse them together until everything is finely chopped and well combined. If you don’t have a hand blender you can just finely chop and mix everything by hand. Leave to one side.
  • Pre-heat the oven to 180 degrees and ensure that the steaks are at room temperature and not just out the fridge.
  • Season all sides of the steak with salt and pepper. Place a griddle pan or frying pan on a high heat and allow it to get really hot. Lay the steaks in the hot pan and allow them to cook for 4 minutes each side.
  • While they are cooking use this time to prepare the lobster tail. Using the sharpest knife you have to cut the tail in half right down the center. Stand the two halves in an oven dish, flesh side up. Spread the garlic, butter and parsley over the flesh.
  • Transfer the steaks to a separate oven dish and place in the oven for 10 minutes, this will give you medium cooked steaks (add 5 minutes for medium well.)
  • When the steaks have been in the oven for 5 minutes cover the lobster with tin foil and add them to the oven for 12 minutes.
  • Place everything up, sit back and enjoy. 😋

I normally serve the chimicurri in a small side dish, as this allows people to add as much or as little as they like, but feel free to add it directly on to the plate when you’re dishing up.

There is something really comforting about strawberry jam, I enjoy it most spread onto hot buttered toast, but it can be used alongside a dish however you choose.

♨ Super Easy Strawberry Jam Recipe

Ingredients:

Method:

  • Cut the leaves from the strawberries and cut the fruit into quarters. Drop into the saucepan and pour the caster sugar over the top.
  • Place onto a high heat hob and stir until sugar dissolves and mixture comes to a boil.
  • Reduce to a medium heat and allow to simmer and reduce for an hour stirring occasionally (do not put a lid on the pan).
  • The jam should have reduced by about 1 third and feel a little thicker, if it hasn’t, allow it to simmer a little longer.
  • Remove from the heat and leave to cool for 30 minutes.
  • After 30 minutes add the lemon juice, stir well and pour into a sealable jar(s).
  • The jam will thicken and set as it cools. Leave the jar(s) to cool completely before placing in the fridge.
  • Let the jam to set overnight and spread on hot toast for breakfast the next day.

Ingredients:

  • 200 g package dried udon noodles
  • 1/2 red pepper, sliced thinly
  • 1 carrot, cut into matchsticks
  • 10 snow peas, trimmed and sliced thinly
  • 1 tablespoon tamari or soy sauce
  • 1/2 tablespoon sesame oil
  • 2 tablespoons seasoned rice vinegar
  • sprinkle of sesame seeds

Method:

  • Cook the noodles as per packet instructions, standard is to place in boiling water for 2 minutes.
  • Once cooked drain thoroughly.
  • While noodles are still hot, add remaining ingredients and toss well to combine.
  • Taste and add more tamari or soy sauce if desired.

♨ Hungarian Goulash Recipe 

Ingredients:

  • 1/4 cup vegetable oil
  • 2 onions, sliced
  • 2 tablespoons sweet paprika
  • 1 teaspoons salt
  • 1/2 teaspoon ground black pepper
  • 1 kg  beef stew meat, cut into 1 1/2 inch cubes
  • 1 small carton tomato paste
  • 1 cup water
  • 1 clove garlic, minced

Sour cream to serve

Method:

  • In a large lidded casserole dish or cooking pot or Dutch heat the oil over a medium heat.
  • Cook the onions in oil until soft but not brown, stirring frequently.
  • Remove onions and set aside.
  • In a bowl, combine paprika, 2 teaspoons salt and pepper.
  • Coat beef cubes in spice mixture, and cook until brown on all sides.
  • Return the onions to the pot, and squeeze in the tomato paste, add the water, and garlic.
  • Reduce heat to low, cover and simmer, stirring occasionally, 1 1/2 to 2 hours, or until meat is tender.

Serve with boiled potatoes and a spoon of sour cream. Enjoy this recipe packed with full of flavor! 😋

Apple Crumble Recipe

Ingredients:

  • 4 good sized apples
  • 2½ tablespoons caster sugar
  • 2 tablespoons water
  • 100g plain flour
  • 50g whole porridge oats
  • 50g butter

Method:

  • Preheat the oven to Gas Mark 5, 190ºC, fan 170°C. Peel, core and thinly slice the apples, and place in a 1 litre baking dish.
  • Sprinkle with a little of the sugar. Pour over 2 tablespoons boiling water.
  • Place the flour, sugar and oats in a mixing bowl. Add the butter and rub into the mixture until it resembles breadcrumbs.
  • Sprinkle topping over the apples and bake for 40-45 minutes until golden brown.
  • Serve with custard or vanilla ice cream. Yummy!
